Halibut for the Helluvit
Here’s a really easy marinade for Halibut, Snapper, Chilean Sea Bass that you will surely enjoy.
In my basket:
1.5 lbs Halibut
Thinly sliced 1/2 red pepper
1 bunch scallions (cleaned)
For the Marinade:
Fresh Ginger (2 table spoons crushed0
1 chopped shallot
1 garlic clove
1/4 cup Rice Wine Vinegar
1/4 cup soy sauce
2 TBSP sesame oil
1 TBSP Honey
1 TBSP dark brown sugar
1 TBSP guava jelly (can be found in Asian Food Stores)
Pepper to taste if needed
Combine all of the above (under “marinade”).
Clean the halibut under cold water and dry.
Place the halibut in a ziploc bag, pour the marinade and place in the refrigerator for 2hrs, minimum 30 minutes.
When it’s time to bake the halibut, preheat the oven to 375.
Remove the halibut from the ziploc and wrap it in foil.
On top of the halibut, add scallions and red pepper.
Pour some of the marinade on top, seal the foil, bake it in the oven for about 15-20 minutes.
Serve with couscous and perhaps sauteed spinach.
